...so when I move the camera the POI stays put and can orbit properly.
You can do it. Select the Camera, and go to Layer > Camera > Create orbit Null
Then you can orbit using the attached Null.

Oh yes, I am aware of that, but taking that extra step out would be nice. I love how 3dsMax camera works, so would be nice to do it that way.
