Now that you can change fonts in essential graphics, is there a way to lock the font but be able to change the font style only for a motion graphics template?

I don't think so, given that a "font style" is technically still a separate font and unless you use faux italic and such via the Adobe text engine you cannot even be sure that all fonts even have a suitable style and are grouped correctly. There's a reason why even the text style expressions don't have a simple "forceItalic" method or similar and you have to reference the actual font name.
