Need help on a project (URGENT)

I'm trying to change a solid from Dark Grey Solid with White grey text to a Red Solid and Black Text

but the text in Start up Text and Type on Title text disspears after I type what I want in Essential Graphics need help URGENTLY.

The text in essential graphics on start up text and type on title does not display once I even enter text i can show a video on what I mean
