Symbol Involuntary Color Change

Sometimes when I convert something to a symbol the program will change the colors to solid black. I've included a YouTube link to show what I mean. How do I keep this from happening and what do I do to fix it?

Hi.

 

The black outline and the skin fill seem to be shapes that can be merged.

 

Turn each of this objects into a Drawing Object (Modify > Combine Objects > Union) or into a Group (Modify > Group (Ctrl/Cmd + G)) before converting them to a symbol.
