Fluctuating Audio Levels

When recording in Audition and then playing back, the audio sporadically increases and decreases in volume through the track.

I am using Audition with a MacBook Pro and a Behringer U Phoria UMC202HD - I have bought a USB to USB C Adapter to connect the interface to the Mac and a new cable.

I also have a Rode NT1A Microphone and took all of the above gear (aside from the mic) to my wedding recently to play videos.  I'm unsure if something was damaged on the day as was all working fine before then.

Unsure where to start in terms of troubleshooting and would really appreciate some advice.

I have also heard crackling which is normally caused by me packing down and switching the gear off in turn.

So is it the recording side where the volume changes are happening or is it happening when you are playing back audio? Do previously recorded audio files play back OK? If on the recording side were you recording into the Waveform or Multitrack view? is the USB to USB-C adapter a genuine Apple one or a third party one? Some third party adapters contain a USB hub which is not good for passing digital audio through.
