why can't I organize files into folders in Adobe Audition? I think it would be a great option.

Why? Because that option isn't there presently. The whole folders/bins thing is one of the most often made requests to Adobe, but you'll have to wait and see what, if anything, they do about it...

Keeping projects organized require us to organize filenames, but sometimes the original files are best kept with original names so they are easy to replace (Proxy > Full Quality)
Please, implement folders, or let us reorder files, or create labels in the Files panel
thank you

This is such an insane oversight. It's amazing that Adobe commands as much market share as they do with all of the common sense things they fail to implement.

That's kind of unbelievable. This is my first time using Audition, but I've used Premiere for years. I can't believe there is no way to create folders inside of Audition. Who works like this?

Every Audition user on the planet - several million of them!

But, seriously, though, how do you keep your project organized? Any tips from longtime Audition users appreciated!

I use folders, the same way that everybody else does. The only difference is that you have to create them outside of Audition - the same as you have to do for just about every other piece of software there is - it's only video editors who think that they're entitled to special treatment... And I don't use bins in Premiere either - I can manage multicamera edit sequences perfectly well without them. You just need to think about it clearly, and then there's no problems at all. Also, it's not strictly true that you can't create folders within Audition; if you use Save As, then you can create a new path easily - including new folders.

Thanks for the tip, Steve!

"entitled to special treatment" lol. Asking for the most basic common sense organization/management options in your piece of expensive software is now "entitlement" get a grip Steve

You wouldn't ask for it unless you thought you were entitled to... it's not me that needs to get a grip at all.
Because I'm under a NDA I couldn't tell you what was happening about this even if I knew - but I've been given to believe that the whole issue of how to implement it at all is apparently complicated by everything to do with the round-trip arrangements between Audition and Premiere, and these are not simple. So I don't know when, or even if, this will be implemented, or how.
So there is no point in discussing this any further - if anything happens, it will be officially announced.
