I am trying to work in Audition CC, but do not seem to have the Remix button as an option. Can anyone suggest why?

If you have a version of Audition that supports Remix (I can't tell from your screengrab) then it will be in the Clip menu (third group).

There is no remix option in the Clip menu - so I assume this means I don't have it. The version is Audition CC - version 6.0; build 732 (64 bit)

Since you have a CC version of Audition, presumably by subscription, why do you not update to a later version (current one is 10.1.1.11)?

Hmmm...the CC and the Version 6 don't really line up. If you mean CS6, that's from a few years before remix was added.
However, if you have CC xxxx then all the more recent releases have remix.

It is the CC version, and the info on the software says version 6.0 (different to CS6 as I understand it)

As I understand it, "version 6" was the first CC release; latest release of CS6 was actually version 5.0.2!
However, I'm not sure what you mean by saying "it has to be compatible with the build on our systems"? Are you suggesting that Queensland education system does not allow any CC software released later than 2014 to be installed? Do you have any means of influencing those in charge to allow you (and, presumably, a whole lot of other users) to update to a more current version? Assuming your Windows installation is reasonably up to date I can think of no reason why the latest version of CC apps cannot be used.

Yes. The original CC release was Version 6 and it was between 3 and 4 years old. Since the move to the Creative Cloud subscription model, Adobe have been releasing updates a couple of times per year so you're missing quite a lot of useful stuff. From memory, Remix was added 1-2 years ago.
Living in Queensland, I realise how bureaucratic Qld Education can be but they're wasting a lot of money paying CC subscriptions if they ignore the frequent updates (which is one of the main reasons for the CC model.
