When I convert ARW file to 16-bit srgb TIFF then Adobe Bridge 2023 (13.0.0.562) automatically adds "Rating 0" to the metadata of the file.

In the metadata for any image, there are places from 1 - 5 for star ratings. There is no "zero" option. Also, any rating that is not 1 - 5 is nothing, and nothing is zero.
Because of this, I am very confused as to what the issue is. Can you please share a screenshot of what your seeing?

When I view the image with Exiftool I see "Rating 0". It shows that only for TIFF's created by Adobe Bridge.

It is curious, but I'm not certain I understand your concern. If you were looking for any images whose ratings are 1 - 5, these would not show up. They should show up if you were looking for any images whose ratings were not 1 - 5.
Exactly what is your concern, if any? I agree that it's a curiosity, but I can't see a reason for any concern. What am I missing?

I don't want that my photos include pointless "junk metadata" because I want that my files are ready for long time digital preservation. I use command "exiftool -rating=" to remove that but sometimes I forget to do that.

There is space in the file for that metadata either way. Rating can be anything from -1 to 5.

That's because the rating is zero. This is optional like most of the other metadata you might see.
