There used to be a way that if I launched Bridge it would open to a blank window by default rather than remember the last set of files I was working with. Is that not possible anymore?

I do not believe there ever was a time that that could happen. Since Bridge is primarily a "viewer" in displaying whatever file or items that might be at any given location on the hard drive, I do not belive that Bridge ever had a Zen approach of seeing nothing. If you go to the Favorites Panel and click anywhere, it will see what's at that folder. In fact, if you haven't already, go to the Window menu, select Path Bar and you can see (on the left hand top) the Birds Trail that shows

Just click on a empty default folder beffore you close Bridge.
It will open to that folder next time.
Or as Gary said create a favorites panel selection.
Bridge has never just opened to a blank window.
I would know.
