Understanding Non-Seamless Gateways

To my understanding when using non-seamless gateway like Google Checkout or PayPal a customer must fill in the data in the checkout form on my site then hit continue to be taken to the gateways website and again fill in the exact same information. Is there a secure way to pass this data or is my understanding in-correct?  It would seem like bad design to have the enter the same information twice.

I do not have much experience with non-seamless gateways and I would like to understand.

You are not filling the same information, you are just making payment. Your form will have no credit card details of any kind and the payment gateway (unless with paypal you have or wish to make an account) does not need the information from the form such as shipping address etc. They are there to just make a payment transaction.
