Create a preset containing the settings you require then set this as the default for your particular camera. These settings will then be applied to all images you open which were taken by that camera.

Open a RAW image taken by the camera in question in ACR.

Set the amount of sharpening and noise reduction required.

Open preset panel by clicking on its icon at the side or press Ctrl P

Click new preset icon or Ctrl+Shift+P

Make sure you check only the adjustments you want saving - probably just the Detail settings in your case.

Save the preset using a sensible name in a new preset group if you want.

Open ACR Preferences (Ctrl K)

Go to Raw Defaults.

Choose your camera and choose the preset you created as default for that camera.

That's it!

If you want to be more sophisticated you can create an Adaptive Preset which automatically adjusts the amount of sharpening and noise reduction according to the ISO speed used. Plenty of demonstrations to be found on YouTube.
