I've copied a button with text from Slide A to Slide B and changed the text of the button on Slide B.
After publishing, if I hover on the button in Slide B, it changes to the original text (from the Slide A button).
Is there a way to prevent this from happening? This behaviour doesn't seem normal at all.

Actually it may be perfectly normal.
Check the state view for this button. YOu may find that the Over state text needs to be changed to be in sync with the Normal state and that is what your 'issue' is.

I see what you're saying, the states are not in sync. I think I'll just make sure to copy from a button that doesn't have any rollover effects.
Thanks Rod

Is this a 'normal' button or a shape button?

Sorry, I should have specified - It's a shape button.

That is what I suspected, because only on shape buttons it is possible to have different labels for states, it is not possible for normal buttons. Rod's answer is correct: you have to check the InBuilt states when you copy a shape button. Look at this State view from one of my blog posts:

If you copy this shape button to another slide, and change the label on that slide, only the Normal state has been changed. I would recommend not to use copy/paste, but to create a style for the shape button, and insert a shape button with that same style on the other slide.
