Hi, I've been working with Adobe captivate for a year. I'm still learning and correcting mistakes that I made at the beginning.
One of the tasks I do is update captivate content from a previous company. These captivates are configured in a way that I have a hard time understanding and I wish I could.
The first problem is that when I make any modification on my computer, the font changes to times new roman when I publish it and I don't know how to prevent this from happening.

Second problem is that the Cptx. of this company are configured in 5 dimensions so that it is optimized from different devices (as I show you in the image).
The problem is that when I use this template so that my creations are optimized to these 5 dimensions, it does not do it perfectly as it did with the previous company.
The publication I use today is scalable Html5 content, but I would like to be able to understand and create these templates myself.
Finally, I would like to ask you what you consider best. Create interactive projects or create normal blank projects to be scalable automatically? This question is because it gives me many problems having to configure an interactive project in all its dimensions and having to modify the position of each box. What advice would you give me?

I have some issues with terminology in your question.
All Captivate projects should be interactive, that is not the opposite of a reponsive project. If you want to read some of my ideas about scalable non-responsive vs responsive projects in Fluid Boxes or Breakpoint views workflow, have a look at:

The screenshot you show indicates that the project has been using Breakpoint views, not Fluid Boxes. What you indicate as 'dimensions' are the Breakpoints. That was the only workflow before version CP2017.
As for your fonts problem: this may be due to the original projects using system fonts which are not installed on your system, or the original developers having converted all static text containers to dynamic ones by inserting a user variable. You may need to edit the theme used so that you limit fonts to Adobe fonts or websafe fonts. Never use system fonts. Here is another link:

About templates: I hope you are not using a cptl (template) file, because they are very buggy since a while. You should use custom theme. Last link:

Do not use scalable HTML for a project created as a responsive project with Breakpoints, please!

I have found the links very interesting. I have also consulted other articles on your blog and they helped me, although I am afraid that some will be outdated. Today, for example, I started captivate and I saw that the library icon had disappeared.
Normally, I don't usually use themes as templates: what I do is create an image in Photoshop and reproduce it throughout the project, but I see that it is better to work with breakpoints, because it scales perfectly. I also think the font issue can be fixed if I spend time setting up a theme and all the text boxes.
Finally, I wanted to comment, that if I wanted to convert the projects created with breakpoints to scalable html, it was because in this way, the changes that I make, I only have to make for some dimensions of a device and thus I spend less time on these changes. Also, I like the full screen look that I get when I post in scalable html, which is something I don't get if I use breakpoints.
I really appreciate your advice, as I said, I have been working with this program for a year and sometimes it becomes unbearable because elements such as font changes work badly and I don't know why. I still have a lot to learn about advanced interactions and variable creation.

Library icon disappeared? That is not the case. Open the Library panel from the Windows menu. I always use the Expert UI in Captivate, because I need custom workspaces. My Library panel is in the right docking station all the time in any workspace. The embedded SWF examples in my older posts are outdated, but since I offer everything for free, why would I bother to update?
From a Breakpoint views it should be possible to copy/paste from the Desktop breakpoint to a non-responsive project which you can publish as Scalable HTML.

I start every project by creating a basic custom theme, but I am aware that most developers have no idea about the power of such a theme to save time.
