I have a list of items on a slide. When they are clicked an image appears on the slide. To show the student that they've already clicked on an item I want it to change color. How would I do this? Advanced Action?

There are different possibilities, but all do use advanced, or better (since you are on 8) shared actions. Is everything happening on one slide? How is such an 'item' looking (maybe a screenshot).
You could think about applying an effect, but I wouldn't recommend that because it is not always working well.
You could cover it with a tinted shape that is initially hidden and that you make visible.
Or you could hide the initial 'item' and show an initially hidden similar item with another colo
