I'm trying to publish a project in a zip file, but keep getting an error saying "Cannot delete folder [folder name]). I've tried deleting anything that could be that folder and tried saving to other places. No luck. Any ideas?

Can you show a screenshot of that error and of the Publish dialog box? Is it possible to tell us the exact version of Captivate that you are using? Is this a blank or a responsive project? Do you have reporting turned on or not?

I'd suggest you examine the path you are saving to, you may not have proper permissions to one of the folders anywhere in that path.

As an exercise, try publishing to the desktop. If that works, it's likely a permissions issue, or the path could be too long.
