I am new at developing quiz questions and need guidance on what type of questions to use when and any resources that might be available to the new Captivate developer regarding the development of quizzes.

I'm not sure this is a real Captivate question, because it is more about pedagogical principles, so I wonder if this is the proper place to find inspiration. Personally (have been professor) I don't think that an assessment ever should exist only in MCQ slides

Captivate's default questions are the ones normally supported by SCORM. Besides the scored questions, Captivate also has Knowledge Check slides and Pretest slides. Some links to blog posts I wrote about the included quiz features:

Besides those question slides, Captivate comes with Drag&Drop which can also be configured as question slide.

Using the standard objects, variables and advanced actions you can also create 'custom' question slides. There are plenty of articles about that type on my blog as well.
