I'm very new to Adobe Captivate and was wondering if it's possible to switch between a PowerPoint slide and then a screen recording and include a voiceover?

Just have one tip: do not use Captivate as a PPT converter, bad idea.
Create project from scratch. You can insert Software simulation slides, using the Slide Big Button. Do not add voice overs immediately. Create them separately and sync later on.
