I am entertaining the idea of hiring someone to record our foreign language courses built in Captivate and then to import the file into Captivate.  If we receive one file with the entire recording and import it into the Captivate project, how do we break the audio up so the appropriate audio is on the correct slide?  Any guidance and/or resources on this topic would be appreciated.

You can import a single audio clip (WAV or MP3) into a Captivate project with multiple slides and have the audio spread over the number of slides you specify. 

However, it's usually better when you give the audio voiceover script to an artist that you mark clearly where there should be a distinct pause to allow for a change of slide. 

Having separate audio clips, one for each slide, is much preferable for a number of reasons, one of which is that the playback will usually start playback quicker than if the end user is required to wait for the entire audio clip of the module to download before playback begins.
