I'm a former teacher that used various pieces of software to teach / interact with students. I'm not in the tech industry and am looking for something to be able to teach concepts. I love adobe's stuff.
Before I invest in this (since its not part of CC), I'd like to hear from people: Who uses this platform and what do you use it for?

Captivate is not a 'platform', but an eLearning authoring tool. Did you mean to ask about Captivate or about the new LMS Captivate Prime, which is a platform?
I mention this because you'll need a way to deploy Captivate courses that you create; most courses are deployed using a LMS.
As college professor I found Captivate (version 1) when searching for an application that could fit in my blended learning strategies. I started using it for software tutorials but later on also for other subjects that I was teaching: project management, soil mechanics, cost price calculation to mention some. Those courses were used by students to be taken in a self-paced way, and time in the 'classroom' could be used to discuss their problems and work on use cases.
