Hello, i'm new user of Adobe Captivate, i have a question, can user make their own quiz (custom questions and answers) on the app that already published without editing project file ? If can, is there any tutorial for that ? Thank you...

No, sorry, that is not possible. Only ineration with the learner is by using the Scrolling Text interaction where they can enter text or tne Notes widgeT.
