What is the best way to take a pre-established logo and use it as a character? Like the new Amazon Logo for instance?

Just break it up as you want it to work. Place the logo in the body or make it the head. But you can set it up just like a regular character. Only maybe it wont have arms, and legs - perhaps it wont even have eyes. All depends on what you are thinking about creating.
