It's my understanding (and my assumption could be incorrect) that if "Developer Edition" is selected during install, and a license is purchased at a later date, then all that needs to be done is to "register" the CF Server by inserting the license key.
You can usually just enter the license key into the installation you have and it will convert it to the relevant version.
The developers edition is pretty much the enterprise edition with some restrictions. When you give it a standard edition key it just disables the functionality you cant use.
If you purchase a license and need to "register" your Developer Edition, log on to CFAdmin and click the information icon (center of three circles in the upper-right, near "LOGOUT") and you will be presented with a form field to enter the key and submit the change.
