I have added bridged audio using an audio profile with my conference phone number, meeting number and password. I would like to know how to get the setting where when users open my Adobe Connect meeting, they have the choice of picking to dial in, have adobe call them by the user entering their phone number and last option is to listen through adobe connect.

You need to associate it with your meeting room (Edit Info for the meeting or in the room Audio > Audio Conference Settings). If you are looking to have the Universal Voice option available, you will need to be sure that an Admin on the account enables that setting for the telephony provider (Administration > Account > More Settings).
Then in the Audio Conference Settings dialog you will have the option to use the integrated telephony and VoIP.
