I am planning on buying an Adobe Creative Cloud Student License, but I noticed in the registration/submission form, it requires a date of graduation. Since I am only 14, I haven't a clue when that date will be, so can I still buy this product, and how?
No, it does not expire then. All Adobe education memberships are paid (or prepaid) on an annual (12-month) basis – so your academic license would end when your subscription term does...
However, because Adobe considers eligibility documents to be current if they are dated anytime within the past six months, then you may be able to renew your plan at the student/teacher discounted rate even after graduation or leaving school.

Yes, per the rules of the Adobe student discount, you can just put the date (month/year) you expect to be leaving the current school that you're in now, or whenever your current term of study or enrollment ends...
That would go for high school, middle school, primary school, etc., plus university or college, as well as post-graduate education.
