I need to buy a laptop for an out of home graphics project and I would like advice on whether I need 16 or 32GB of RAM. I'm a MAC user at home, so want to stay with MAC and am looking at a pretty decked-out used 2019 16" MacBook Pro 2.3GHz i9 8-Core/32GB RAM/2TB Flash/5500M 8GB. On Ebay they are selling at around $2,600, but if I drop to 16gb and 1TB flash drive I can save almost a grand.

Premiere Pro requires the "most" computing power and ram... for everything else 16gig should be fine *
* I am on Windows and I build my own, so I really don't know much about a Mac

I forgot to add I use Creative Cloud and usually have Ps, Id, Ai and other programs like Quickbooks, MS Word, Excel, etc. open at the same time.

Never scrimp on RAM. Big Sur alone eats up 8 GB of RAM & can take up 35-45 GB of primary hard drive space. I agree with @Peru Bob, get as much RAM and hard drive space as you can comfortably afford. You'll need it to support multiple apps and heavy or complex project files.
