I will be away for a couple of weeks with no access to an internet connection.

Question is will I still be able to access my Adobe Apps and for how long if at all???

depends on your subscription, but at least 30 days after last license check, https://helpx.adobe.com/creative-cloud/kb/internet-connection-creative-cloud-apps.html

i recommend, while still connected, open the apps you'll want to use later.  you can minimize them, but don't close them while offline.
