Hello,

I've created a Motion page on my website using Portfolio. The video player is generating a random frame for the opening. Does anyone know how to choose an opening frame?  Thank you

Yes.  Don't use Portfolio's player.  Upload your video to YouTube or Vimeo where you can choose the best frame for your poster image. Then use the PF Embed Module to bring YT or Vimeo <iframe> into your Portfolio project.  See link below for more details.
