How to stack scanned documents into multiple files

Is there a way to take a scan of around 100 pages, then be able to stack page 1 and 2, give it a file name, then stack page 3 and 4, and give it a different file....etc.?

Yes.  In Acrobat Pro DC, use Tools > Organize pages.

It may take several hours, though.
