I have a University provided shared device download for an Intel Mac (2018) running macOS 11.4. Install gets to the end, but the deletes install and displays message 'The installation failed. The installer encountered an error that caused the installation to fail. Contact the software manufacturer for assistance' but does not provide an error code

Yes, certainly contact the university. This is a custom installer they have made, and they are responsible for.

You need to know that support will be provided for your type of installation by yor University. If your university needs support (to solve your problem) they will contact Adobe. That's how the system works for Enterprise licences as your university has.
