I have a mac with Big Sur 11.2.3, and the CC apps all updated.
In the last few days i can, in PS or AI, open and edit files, but, when i try to save, save as or export files the software crashes. I've allready try to uninstall and install the apps, but the problem persits.

I just tried it, and it didn't work. The problem persists.
did you confirm your reset was successful (eg, by defining a custom keyboard shortcut and checking that it was reset)?
if no, do so.
