I'd like to pay the small fee to renew my subscription but I anticipate not have access to my edu email in 3 months, will I be able to change it to a gmail account for the remaining months of the year that I paid for in advance.
Thank you

The student subscription will be valid for one year and if I’m not wrong, you will get a grace period subscription for an other year when your assignment runs out. You will be able to use the subscription, even if you do not have an .edu e-mail address. When taking the subscription you will need to prove that you are a student according to the terms. If you have a educational e-mail, that proves your status, but else, you may submit any proof that shows your status and is not older then 6 month.

Thanks for the reply. It turns out my University is handling the student subscriptions differently now...but you are probably correct about other student subscriptions. Adobe confirmed that I would be able to finish out my year with a non edu address if necessary.

Yes, there is a second solution where the university takes the subscription and assigns a license to the students. I do not know your conditions from the university, but I can imagine that they can also retrieve the license.
I’m using a similar license at work and I, as the manager of those licenses, can assign or unassign licenses to individual users.
Are you paying the university for your license (or is it frre for students)? If you are paying, are you paying on a per month basis or are you paying an upfront for the year?
