Good question. Several reasons.
Developers are reluctant to put their Apps on the App Store due to Apple-imposed limitations, including:

1.
After I bought MacBook Pro 13 a month ago, I tried to install McAfee out of the App Store.
I couldn't install it.
Now, I can guess the reason.
2.
I also found that uninstalling app from Mac is not so simple.
With Mac one month on, I think Mac is much better than Windows.
There are some cons.

What are you struggling with?
You use Finder to locate the Applications folder, select the app you want to uninstall, right click then Move to Bin (or Trash).

I watched some YouTube videos.
After uninstalling an app, they cleared some files/folders in Finder.
(I also found out some apps to facilitate uninstallation process.)

That's good practice but not essential.

Yes, there are a few. I use CleanMyMac for housekeeping.

Creative Cloud apps: download and install
Most other apps: throw them away and subscribe to Creative Cloud.
New Macs run Catalina, which can only run very new apps.
