I have two versions of Photoshop and don't know why: version 20.0.8 and 21.1.2. Can I uninstall version 20.0.8 without any problem?

Sure.  If the new version works perfectly for you and you're certain you will never ever need the old version again, go ahead and uninstall it.

However, if you're not 100% sure about the new version and you have plenty of hard disk space, keep it.  It doesn't hurt anything to have multiple versions of Photoshop.
