Writing Name on PDF or eBook?

I'm a special education teacher trying to navigate my way through online learning. Is there a way to create a space in a PDF or eBook to have my students be able to write their name on a touchscreen device using their finger or stylus? I tried adding signature block in InDesign but it turns it doesn't do what I want. Thanks in advance for your help!

To collect document e-signatures online, look at Adobe Sign.

But for what you're doing, Sign is probably overkill.
