Has anything changed on your system recently being that it only stopped in the last few days? Also, have you tried restoring preferences ( https://helpx.adobe.com/dreamweaver/kb/restore-preferences-dreamweaver.html#:~:text=Hold%20down%20Cm... ) or reinstalling?

- In the last two days, this has just stopped working. I can force it to compile by selecting a file and pressing F9 but even this works inconsistently with it working or not

That indicates something has changed in the last few days.
Do you have backup files you can revert to?

No changes (that I am aware of). Does restoring preferences require me to lose all site definitions/data because there's many sites that are being managed.

It is always recommended before performing any troubleshooting tactics that you create a backup of your site definitions if you do not have the site details saved anywhere else. If you open DW and click on Site --> Manage Sites, you can export the site definitions from there and have a backup of your credentials/etc. Site files such as HTML/CSS/JS are not stored in Dreamweaver and are stored on your local hard drive and remote server so those should be backed up as you would typically back up files on your computer.
