Can you delete a site after it has been created or modify some its properties.

Do you mean the Dreamweaver Site Defintion?

From the Dreamweaver toolbar: site  > manage sites or you can acccess it from the file panel

Yes you can delete the physical site folder with your operating system's file manager (aka Mac Finder or Win File Explorer). 

You can also delete the Site Defintion from Manage Sites.  See screenshot.
