I'm attempting to stop Adobe Acrobat Pro XI from prompting activation on a computer that is not on the network. I packaged the application which successfully deploys to computers/laptops on our network. I've successfully done the same thing for all of our Creative Cloud applications. This computer originally was on the network but now has been designated in an offline environment. However the 30 day license check needs to be disabled.
I've gone through the "Offline activation" process twice and both attempts I've been able to generate a Response Code from Acrobat Pro however when I go back to the client PC with Adobe Acrobat Professional XI I get an "Invalid" response code error.

You need to use Creative Cloud packager which you can download from your Licensing website.
With the Creative Cloud Packager you can create a licensing file for Acrobat with the serial numbers from licensing website.
