I am presently running Windows 8.1 and just recently when I have a pdf document open or editing a pdf file within 20-30 seconds "Adobe Not Responding" appears on the top of the screen. The only way I have found to get around this issue is having to reboot the pc which an inconvenience.

Please let me know the version of Acrobat installed on your computer?
Open Acrobat, navigate to Help menu & repair the installation.
