We use Adobe Creative Cloud for Teams where I work, but NOT any of the cloud storage functionality. I just have the apps like Photoshop and and Premiere to use to work on images or movies.

Can the admin of CC for Teams view what projects I'm working on? Even their titles? What can they actually view about what I work on?

So the Teams admin can't see anything I'm working on? Not even filenames?
