Does Adobe have an install for adobe pro that doesn't have the subscription? We need to use adobe distiller in a production mode and don't need troubles with expiring subscriptions and that sort of difficulty.

Install a Classic track product with a license. There's no requirement to subscribe to anything. You can disable all services if you want as well.
