For what it's worth, in the case of Japanese, I just switch the Windows language IME to Japanese and start typing.

I would assume that is also how Chinese would work....?

You'd also need to have the right font installed too.

Probably just need to install the Windows Chinese language pack (Simplified or Traditional).

And avoid using any Unicode character codepoints above U+FFFF, which unfortunately includes a lot of Unified CJK Ideographs (SIP), regardless of font support for them.
