Is there a way to set the cells in a table to automatically size to the content that is inserted into the cell?

Not when you are adding text or images to a cell, no.

After you finish the table, you can select the column and use Esc+tw to resize to the widest width or click the Shrinkwrap Column Width button in the Table menu bar.
