32 GB but illustrator keeps going into preview 2022

I have a 32 gb 1tb 14" 2021 MBP and I keep getting "system runs out of application memory" and it says illustrator is using 6gb? Or when im drawing in illustrator it suddenly goes into preview mode all outlined? maybe I have too many anchor points? why is it doing this how can I get it to stop or delegate more GB to illustrator? I cant add anything to my project because everytime I do it pops into outline mode and says "can't finish previewing, couldn't complete the request operation"
