Hello @Polo Freitas,
Thanks for confirming that. Kindly check if the secondary SSD is formatted to macOS extended as that is the only supported file system for setting up a scratch disk in macOS.
You may reformat a disk by following the steps shared in this article: https://support.apple.com/en-in/guide/disk-utility/dskutl14079/mac.
Looking forward to your response.
Regards.

Hello @Polo Freitas,
Sorry to hear about this experience. I would request you to grant Illustrator Full Disk Access by following the steps shared in this article and checking if it helps: https://support.avast.com/en-in/article/allow-mac-full-disk-access/#pc.
Also, try resetting Illustrator's preferences by following the steps shared in this article (https://helpx.adobe.com/illustrator/kb/troubleshoot-preference-issues.html) and sharing your observations.
Disclaimer: Please note that resetting preferences will remove all custom settings, and Illustrator will launch with the defaults. You may take a backup of these settings from the location mentioned in the article.
Looking forward to hearing from you.
Thanks,
Anubhav

Thanks for the support, but it didn't work.
I uninstalled everything, did a clean install, Full Disk Access and it doesn't fix the chosen disk.
I just have this problem with illustrator, it's very curious...
