Why when I try to create a new custom template and hit create I get this? I am trying to do my assignment but the white background is not popping up.

Maybe it helps if you hide the Transparency Grid in the View menu.

That usually happens when the Transparency Grid is turned on instead of a solid background. Illustrator doesn’t actually create “white” artboards — it just shows a transparent one unless you toggle the grid off.

Try this:
Go to View → Hide Transparency Grid (or press Shift + Ctrl/Cmd + D). That should bring back the normal white background.

If it still looks gray or transparent afterward, double-check that your Document Color Mode (File → Document Color Mode) is set to RGB, not CMYK — sometimes CMYK previews can appear dull or grayish.
