Maybe it helps if you hide the Transparency Grid in the View menu.

That usually happens when the Transparency Grid is turned on instead of a solid background. Illustrator doesn’t actually create “white” artboards — it just shows a transparent one unless you toggle the grid off.
Try this:
Go to View → Hide Transparency Grid (or press Shift + Ctrl/Cmd + D). That should bring back the normal white background.
If it still looks gray or transparent afterward, double-check that your Document Color Mode (File → Document Color Mode) is set to RGB, not CMYK — sometimes CMYK previews can appear dull or grayish.
