Where do I change the setting so when I open docs, OVERPRINT PREVIEW is the default so I don't get that annoying grey background.

You need to set that up in your New Document Profile.

 

But if you just want to get rid of the grey canvas, then you can also set that up independtly of Overprint preview. In Preferences > User interface
