I'd like to be able to change the anchor color of the layer to be different than the path. Or at least be able to change it from white which I can't see half the time.
I uploaded an example of what I would like. 'cause I can't see the anchors with white and a tiny 1px outline on my screen. This makes manipulating the handles really difficult. But if I could change the anchor color/handle point color, it would be much easier to see than white on white with a tiny 1 pixel.
What I did was match the path and then added a 1 pixel white outline which is much more visible at a distance if you test it out.

It's easy enough to change the layer color for how selected object outlines, anchor points and direction handles are displayed. Just double click the layer in the Layers palette. The color can be changed to something different than line strokes applied to artwork. I must be missing something about anchors (or anchor points) being colored white. Those elements usually inherit the layer color when the object is selected. The size of anchor points and direction handle points can be changed in preferences to be larger and more legible on higher resolution displays. There isn't a setting to make anchor points and direction points a different color than the visible outline over the path of a selected object.

As Bobby has mention above you can only change layer object color and handle style or size. Its not possible change anchor colors only, unfortunately.

Yeah, but I'd like it so you could because I can't see white with a tiny outline of the selected color. I keep missing the handles, etc. It's a UX improvement request.

I'm still not understanding what in the selected path is being colored white. Are you describing how the direction point handles are colored? They can be set to solid in color or with a hollow "white" color, as shown in Ares' example from Illustrator Preferences shown above.
If the highlighted line of the selected path is perhaps too thin it's possible to change UI scaling settings as well as changing the size of how anchor points and their handles are displayed. What is your computer monitor's resolution setting (1920x1080, 3840x2160, etc)?

The anchors and paths in white is a running issue. Are you perhaps working in overprint preview or pixel preview?
