Can't add gradient to a stroke

Every time i select a shape and try to add a gradient it automatically adds it to the fill (which i don't want) and doesnt let me add it to the stroke.

That's because you focused the fill colour.

 

Make sure that the stroke is in focus and try again.

Do you see the blue square behind the rectangle? You need to first get it to the front of it. THen try and apply the stroke.

Or did you already try that? In that case please show us a screenshot of the selected object with Appearance panel. WIndow > Appearance, not that thing in the Properties panel.
