Can't change fill in Mesh tool

Hello everyone,

Whenever I try to change the color of the mesh, it doesn't do anything. The Mesh remains one solid color. It doesn't matter if I try to change the color of a single anchor, or if I try to change the mesh color as a whole.
Illustrator also thinks its another color. It shows it as a light grey in the color palettes but on the drawing board it is displayed as the color I chose while I was creating the mesh.
The Layer is visible. There are no transparencys applied, neither are layer modes or any other effects.
I tried creating a new document, and restarting adobe illustrator and the PC. Problem still remains.

I couldn't find another post that had the same problem with the Mesh tool.
I would be glad for any help.

You are editing an envelope mesh to distort  content.

I think you want to use a gradient mesh to blend colors.

Which version of Illustrator are you using?

 

Also, can you share a sample Illustrator file (.ai)?

I'm on Illustrator 2021 v 25.1
I currently get this error message whenever I try to Upload an example file:
"The attachment's mesh-problems-example.ai content type (application/postscript) does not match its file extension and has been removed."

Something must be off with my Programm. I will try to reinstall and update Illustrator.

The first mesh is copied from the file in which I first noticed the Problem. The second blue mesh is created in this new document.
