I have created text and applied a 3D Extrude effect to it.

How do I change the colour of the 3D shadow that appears behind the text?

Thanks for reaching out. Currently, it is not possible to change the colors of the Shadows generated using the 3D panel. You may want to do it manually (https://adobe.ly/4iuXr5n).

It's a mockup -- not strictly representative of the actual file.

The help file doesn't state explicitly, but you can do something similar by adding an extra light with a different colour that just hits the extrusion:
